I know when some people think of mushrooms the first thing that comes to their mind is ewww! However mushrooms are very nutritious. They are excellent source of niacin, potassium,selenium, and riboflavin. Here's how i came to discover how delicious they were. I was looking through you tube for vegetarian recipes, and no I'm not a vegetarian. I still eat fish. So i came across a mushroom dish where the chef started off with cutting some green, yellow, and red peppers, red and white onions, garlic and some slice tomatoes. Boy the aroma of frying these in a sauce pan was wonderful. After the onions became see through i added the sliced portabello mushrooms. I steamed for a little while with the top on. Oh yes i added a little coconut oil and safflower oil to cook the herbs and vegetables. It is also my taste to cook with organic ingredients. The flavor is just more delightful for me. I then added organic tomato sauce. Mix that jammy all up, added the lentils with the same herbs and spices put it on top of some brown rice with the mushroom delight as i would call it and side serving of cabbage. I'm telling you delicious! My mouth is watering now.
